jasmine tea with salted cheese
salted cheese with boba?! when i first saw it on a happy lemon menu, i was skeptical. my friend swore that it was hands down his favorite drink and acknowledged my skepticism. i tried it, and i was hooked! salted cheese is a combination of cream cheese, whipping cream, milk, sugar, and salt. it is thicky, creamy, and makes this drink feel like a dessert. the touch of salt is apparent and balances out the sweetness and creaminess. in this recipe, i make a version just like happy lemon! 🍋
Ingredients
jasmine tea
- 1 tbsp jasmine tea
- 1 cup boiling water
boba
- ⅓ cup boba
- 2 tsp brown sugar
- 1 tsp honey
salted cheese
- 1½ oz cream cheese
- 2 tsp sugar
- 2 tbsp milk
- 2 tbsp whipping cream
- ⅛ tsp salt (or to taste)
Instructions
prepare jasmine tea
- add jasmine and boiling water to a medium bowl. let it steep for 3 mins.
- use a sieve to remove the tea leaves.
- chill in the refrigerator for 15 mins.
make boba
- fill saucepan with 3 1⁄3 cups of water, and place on stovetop on high heat. once boiled, reduce heat to medium-low heat and add uncooked boba. mix occasionally for 2 – 3 mins.
- turn off and let boba rest for 2 -3 mins.
- add brown sugar & honey to a small bowl.
- use a sieve to strain boba into the same bowl.
make salted cheese
- whisk cream cheese and sugar on high for 15 – 30 secs.
- add milk and continue to whisk on high for another 30 secs (or until well incorporated).
- in a separate bowl, whisk whipping cream on high for 30 secs – 1 min (or until there are soft peaks).
- add cream cheese mixture and salt to the whipping cream on high for 30 secs – 1 min (or until well incorporated).
assemble drink
- add boba, ice, & jasmine tea.
- add salted cheese.
- top with a sprinkle of matcha powder.

special equipment
- saucepan: this is my favorite saucepan. i have had mine for years; it’s durable & versatile.
- sieve: this is also great for removing tea leaves.
- hand mixer: the ones by kitchenaid are long-lasting. i recently upgraded to a cordless one. i also would recommend a more affordable option – a corded one (mine is still working after nearly a decade).
- boba straw: these are one of my favorite boba straws.
tips
- where can i get boba pearls? my favorite are from wu fu yuan (if you are near by a 99 ranch or asian grocery store, you will be able to find them there) and tea people.
