matcha mochi cloud with tea people organic matcha powder


matcha mochi cloud
tea people has some of my favorite teas – jasmine, matcha, etc. i always have them on hand in my pantry for whenever i have a boba craving (which is often)! they recently gifted me their organic matcha powder, and i was excited to grow my tea stash! i usually make your basic matcha latte, but today i was looking for something different and more decadent. this matcha mochi cloud is earthy, creamy, and is topped with matcha mochi balls! let's make this drink! 🍵
Ingredients
matcha
- 1 tsp tea people organic matcha powder
- ½ cup + 1 tbsp boiling water
matcha mochi balls
- 2 tbsp glutinous rice flour
- 1 tsp tea people organic matcha powder
- 1 tsp sugar
- 1 tbsp boiling water
whipped cream
- 3 tbsp whipped cream
- 1 tsp sugar
- 1 – 2 tsp milk
other
- 1 – 2 tsp sugar
- 1 cup ice
Instructions
prepare matcha
- whisk matcha powder with 1 tbsp water to make paste.
- whisk in an additional 1/2 cup water. set aside.
make matcha mochi balls
- add 1 cup cold water + ½ cup of ice in a medium bowl and set aside.
- divide into 3 equal pieces and roll into balls.
- add 1 cup of water to a saucepan on high heat.
- once the water is boiling, reduce to medium-high heat. add mochi balls into the saucepan.
- stir occasionally and let it cook for 3 – 5 mins (or until the mochi balls float to the top).
- using a sieve, remove excess water. place mochi balls into the medium bowl with cold water and ice.
- skewer the mochi balls onto a lollipop stick
make whipped cream
- using a hand mixer, mix whipped cream and sugar together for 1 min on high (or until soft peaks).
- fold in milk to loosen the mixture.
assemble drink
- add simple syrup and ice to a cup.
- pour matcha.
- top with whipped cream and mochi balls.

special equipment
- saucepan: this is my favorite saucepan. i have had mine for years; it’s durable & versatile.
- matcha bowl: sugarhouse ceramics co. has my favorite matcha bowls (however, they always sell out fast when released). there are some on amazon that i like such as the textured glass one. this isn’t required (because i have definitely used regular bowls); however, if you make matcha often, a matcha bowl is a must as the spout is super helpful when pouring.
- matcha whisk: this is the one i frequently use. however, i also have this one in my kitchen too. this is a must when making matcha.
- sieve: this is also a must when making matcha. using this ensures all the clumps are removed from the matcha powder. this creates a smoother drink (have you ever had matcha drinks that still have clumps of matcha powder? i definitely have!).
- hand mixer: the ones by kitchenaid are long-lasting. i recently upgraded to a cordless one. i also would recommend a more affordable option – a corded one (mine is still working after nearly a decade).
